Description

These Vegan Walnut Oat Scones are made by mixing oats, flours, sugar, leaveners, and salt with chopped walnuts. Wet ingredients—plant milk with vinegar, melted vegan butter, and canola oil—are combined and stirred into the dry mix just until incorporated to ensure tender scones. The dough is shaped into a circle, cut into wedges, and topped with brown sugar and extra walnuts before baking.

During baking at 425°F, the scones rise and develop a golden crust with a soft interior textured by oats and walnuts. The brown sugar caramelizes on the surface, adding a subtle crunch and sweetness that complements the nutty flavor from the walnuts and oats.

  • ½ cup plant-based milk
  • 1 teaspoon vinegar
  • 2 tablespoons vegan butter
  • 1 ¾ cup rolled oats of
  • ¾ all-purpose flour
  • ¾ cup whole wheat flour or sub for all-purpose flour
  • ¾ cup granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup walnuts chopped, plus more for topping
  • 2 tablespoons canola oil
  • ¼ cup brown sugar

Instructions

  1. Preheat the oven to 425 degrees F; spray cookie sheet with nonstick cooking spray, or parchment paper or my new favorite: a silicone pad!!
  2. Mix together the plant-based milk and vinegar and set aside.
  3. Combine dry ingredients and walnuts in a large bowl, mix well. 
  4. Melt the vegan butter and combine in a small bowl with the sour plant-based milk, and oil; add to dry ingredients and stir until just mixed. 
  5. Turn the dough onto a lightly floured surface and knead a few times to form into a ball; flatten the dough into an 8-in.-diameter circle and cut into eight wedges.
  6. Sprinkle the brown sugar on top of the scones, place more walnuts on top
  7. Put the wedges on a prepared cookie sheet and bake for 12 to 15 minutes, until lightly browned. Cool slightly on a cooling rack.

  • Adding natural vanilla extract enhances the aroma of the scones.
  • Spices like cinnamon or ginger powder complement the walnuts and oats well.
  • Dried fruits such as raisins, cranberries, cherries, or blueberries can be added for extra flavor (½ to 1 cup).
