Vegetable Beef Soup

Delicious vegetable beef soup loaded with vegetables and simmered on the stovetop that makes for a hearty dinner or lunch!

Ingredients

  • 1.5 pounds stewing meat cut up small
  • salt
  • black pepper
  • 2-3 tablespoons olive oil
  • 1 cup white onion finely diced
  • 1 tablespoon garlic minced
  • 1-2 teaspoon Italian seasoning
  • one ounce can diced tomatoes
  • 6-7 cups beef broth
  • 1 tsp Worcestershire sauce
  • 1 cup celery chopped
  • 2 large russet potato peeled and cut into 1/2-inch cubes
  • 2 cups vegetables frozen
  • salt to taste
  • black pepper to taste

Instructions

  1. Season the beef with salt and pepper.
  2. Heat the olive oil in the bottom of a large soup pot, then add in the beef and white onion, frying until the beef is browned on all sides and the onion has softened.
  3. Add the garlic and cook for 1-2 minutes, until browned and fragrant. Add in the Italian seasoning and heat for 30 seconds.
  4. Pour some of the beef broth into the bottom of the pan and deglaze the bottom,
  5. Add in the rest of the broth, then the canned tomatoes and Worcestershire sauce to the pot.
  6. Bring to a low simmer, then reduce the heat and cover.
  7. Cook for 20 minutes until the beef starts to become tender.
  8. Add in the potatoes and celery and cook for another 20 minutes until the potatoes are tender.
  9. Stir in the frozen vegetables and cook for 10-15 minutes more until they are tender.
  10. Add more broth if the soup is too thick at this point. Taste and add salt and pepper as desired.
  11. Serve.

Notes

  • Cutting the stewing beef small ensures it will be tender
