Ingredients
- 1 Tbsp. olive oil
- 2 cups broccoli florets
- 1 cup cauliflower florets
- 1/2 onion chopped
- 1/2 cup celery chopped
- 1 TB shredded carrots
- 3 tsp. minced garlic
- 2 tsp. ginger paste
- 1 tsp. Turmeric
- 1 tsp. ground thyme
- salt and pepper to taste
- 10 oz. tomatoes diced
- Juice from half of a lemon
- 4 cups vegetable broth
- 3 cups chopped kale
Instructions
- Add the oil to a large saucepan over medium heat. Stir the broccoli, cauliflower, onions, celery, and carrots into the oil in the pot. Saute until the vegetables are beginning to soften.
- Mix in the garlic, ginger paste, turmeric, ground thyme, and salt and pepper to taste.
- Pour in the diced tomatoes and veggie broth. Stir to combine.
- Cover and simmer for 45 minutes or until the vegetables are softened.
- Mix in the kale, and simmer until wilted.
