Ingredients

  • 1 Tbsp. olive oil
  • 2 cups broccoli florets
  • 1 cup cauliflower florets
  • 1/2 onion chopped
  • 1/2 cup celery chopped
  • 1 TB shredded carrots
  • 3 tsp. minced garlic 
  • 2 tsp. ginger paste
  • 1 tsp. Turmeric
  • 1 tsp. ground thyme
  • salt and pepper to taste
  • 10 oz. tomatoes diced
  • Juice from half of a lemon
  • 4 cups vegetable broth
  • 3 cups chopped kale

Instructions

  1. Add the oil to a large saucepan over medium heat. Stir the broccoli, cauliflower, onions, celery, and carrots into the oil in the pot. Saute until the vegetables are beginning to soften.
  2. Mix in the garlic, ginger paste, turmeric, ground thyme, and salt and pepper to taste.
  3. Pour in the diced tomatoes and veggie broth. Stir to combine.
  4. Cover and simmer for 45 minutes or until the vegetables are softened.
  5. Mix in the kale, and simmer until wilted.
