Vegetarian Broccoli Salad

This Vegetarian Broccoli Salad combines crunchy chopped broccoli and shredded carrots with a tangy dressing made from mayonnaise, Greek yogurt, apple cider vinegar, and honey. Dried cranberries and roasted sunflower seeds add bursts of sweetness and texture, while cubed cheese provides creaminess. Ingredients

  • 4-5 cups broccoli chopped
  • ⅓ cup carrot shredded
  • ⅓ cup dried cranberries
  • ¼ cup green onion divided, chopped
  • ¼ cup sunflower seeds roasted
  • 2-4 oz cheese cheddar/colby/mozzarella, cubed
  • ½ cup mayonnaise quality
  • ¼ cup Greek yogurt plain, 2% fat
  • 1 TBSP apple cider vinegar
  • 1 TBSP honey
  • ¼ tsp salt sea salt
  • ¼ tsp black pepper
OPTIONAL EXTRAS + MIX-INS:
  • almonds sliced
  • vegan bacon bits
  • cauliflower
  • red onion
  • raisins
  • grapes
  • and anything else you can dream up!

Instructions

  1. In a large salad bowl, make your dressing by whisking together mayonnaise, yogurt, vinegar, honey, salt, pepper, and half the green onion. Set aside.
  2. Wash and dry your broccoli and pat dry with a paper towel. Chop into bite-sized pieces and combine with carrots and cheddar in your dressing bowl.
  3. Fold ingredients together to coat the veggies, cover, and chill for 30-60 minutes before serving.
  4. Before serving mix in cranberries and sunflower seeds and top with remaining green onion. Enjoy!

Notes

  • Chill the salad for at least 30 minutes to develop flavor and soften the broccoli slightly while preserving crunch.
  • If adding extra mix-ins makes the dressing insufficient, prepare additional dressing to coat evenly.
  • The salad keeps well for several hours chilled, making it convenient for advance prep.
  • Use quality mayonnaise and fresh green onions for the best flavor in the dressing.
