Description
Vegetarian Broccoli Salad features fresh chopped broccoli and shredded carrots tossed in a creamy dressing blended from mayonnaise, Greek yogurt, vinegar, honey, salt, pepper, and green onions. After tossing, the salad is chilled to let the flavors meld and the broccoli soften slightly while maintaining crunch.
Before serving, dried cranberries and sunflower seeds are folded in for sweetness and nuttiness, and the remaining green onions are sprinkled on top. Cubed cheddar, colby, or mozzarella cheese adds a mild creaminess that balances the tangy dressing and the crisp vegetables.
This salad works well as a refreshing side for picnics, barbecues, or light lunches. You can customize it with optional mix-ins like sliced almonds, raisins, or vegan bacon bits if desired.
Chilling improves flavor development and texture. If overloaded with add-ins, prepare extra dressing to ensure everything is well coated.
Ingredients
- 4-5 cups broccoli chopped
- ⅓ cup carrot shredded
- ⅓ cup dried cranberries
- ¼ cup green onion divided, chopped
- ¼ cup sunflower seeds roasted
- 2-4 oz cheese cheddar/colby/mozzarella, cubed
- ½ cup mayonnaise quality
- ¼ cup Greek yogurt plain, 2% fat
- 1 TBSP apple cider vinegar
- 1 TBSP honey
- ¼ tsp salt sea salt
- ¼ tsp black pepper
OPTIONAL EXTRAS + MIX-INS:
- almonds sliced
- vegan bacon bits
- cauliflower
- red onion
- raisins
- grapes
- and anything else you can dream up!
Instructions
- In a large salad bowl, make your dressing by whisking together mayonnaise, yogurt, vinegar, honey, salt, pepper, and half the green onion. Set aside.
- Wash and dry your broccoli and pat dry with a paper towel. Chop into bite-sized pieces and combine with carrots and cheddar in your dressing bowl.
- Fold ingredients together to coat the veggies, cover, and chill for 30-60 minutes before serving.
- Before serving mix in cranberries and sunflower seeds and top with remaining green onion. Enjoy!

- Chill the salad for at least 30 minutes to develop flavor and soften the broccoli slightly while preserving crunch.
