Ingredients
- 1 tablespoon vegetable oil
- 1 yellow onion , chopped
- 1 red bell pepper , chopped
- 1 carrot , finely diced
- 1 large sweet potato , peeled and finely diced
- 3 cloves garlic minced
- 1 teaspoon kosher salt
- 1/2 teaspoon coarse ground black pepper
- 1/4 teaspoon ground cayenne pepper
- 1 teaspoon ground cumin
- 1 cup vegetable broth
- 28 ounces canned crushed tomatoes
- 1/4 cup tomato paste
- 1/4 cup chili powder
- 1 tablespoon brown sugar
- 28 ounces Kidney Beans , rinsed
- 14 ounces chili beans , rinsed
Instructions
- Add the vegetable oil, onion, bell pepper, carrot and sweet potato to a large Dutch oven on medium heat.
- Add in garlic, salt, black pepper, cayenne pepper and cumin.
- Stir well and cook for 30 seconds.
- Add in the vegetable broth, crushed tomatoes, tomato paste, chili powder, brown sugar, kidney beans and chili beans.
- Bring to a boil then, reduce to low heat, cover and simmer for 45 minutes until thickened and the vegetables are tender.
