Blueberry French Toast Casserole:

  • 1 bread large loaf
  • 2 ½ cups blueberries
  • 5 egg lightly beaten, large
  • 2 cups milk whole
  • 1/2 granulated sugar
  • 1 teaspoon vanilla extract
  • ½ teaspoon ground cinnamon
  • ¼ cup butter melted, unsalted
  • pinch salt

Instructions

  1. Preheat oven to 350°F. Grease a 13X9 inch baking dish and set aside.
  2. On a cutting board, cut bread into 1-inch cubes.
  3. Add bread cubes into prepared baking dish and sprinkle blueberries evenly across the top.
  4. In a medium bowl whisk together eggs, milk, melted butter, cinnamon, vanilla, sugar and salt.
  5. Pour the mixture evenly over the cubed bread and blueberries.
  6. Bake for 35-40 minutes or until a knife inserted in the center comes out clean.
  7. Remove from the oven set aside to cool for 5 minutes.
  8. Dust with optional powdered sugar. Serve with ice cream and drizzle with caramel sauce!
