Vegetarian Mexican Pinwheels - A Make Ahead Snack
Vegetarian Mexican pinwheels combine cream cheese, sour cream, shredded cheddar, and chopped green chili, red bell pepper, and green onions with Cajun seasoning in a creamy filling. Spread on flour tortillas, rolled, chilled, and sliced, they make colorful and flavorful bite-sized snacks. The filling is spicy and creamy while the tortillas provide a soft wrap.
Ingredients
- 1 green chili
- ½ bell pepper small red
- 2 green onions
- 1 cream cheese package (8 ounce), softened
- 1 cup sour cream
- 1 cup cheddar cheese shredded
- 1 teaspoon Cajun seasoning
- ¼ teaspoon salt see notes
- 8 flour tortillas
Instructions
- Finely chop the green chili, bell pepper and green onions.
- In a medium bowl, combine the cream cheese and sour cream and mix thoroughly.
- Stir in cheddar cheese, chopped chilies, green onion and bell pepper.
- Add the cajun seasoning and salt if using.
- Stir everything together until well combined.
- Lay a tortilla on a chopping board and evenly spread about ⅓-1/2 cup of the filling over it. (The exact amount will depend on the size of your tortilla.)
- Roll the tortilla up tightly and wrap in plastic wrap.
- Repeat with the remaining tortillas.
- Place all tortillas in the refrigerator for at least 2 hours or overnight.
- Slice in ½ inch pieces and serve.
Notes
- Check the salt content of your Cajun seasoning to avoid over-salting the filling.
