Vegetarian Mexican Pinwheels - A Make Ahead Snack

Vegetarian Mexican pinwheels combine cream cheese, sour cream, shredded cheddar, and chopped green chili, red bell pepper, and green onions with Cajun seasoning in a creamy filling. Spread on flour tortillas, rolled, chilled, and sliced, they make colorful and flavorful bite-sized snacks. The filling is spicy and creamy while the tortillas provide a soft wrap.

Description

Vegetarian Mexican Pinwheels consist of finely chopped green chili, red bell pepper, and green onions mixed into a creamy base of softened cream cheese and sour cream. Shredded cheddar adds richness and texture while Cajun seasoning seasons the mixture with a mild spice blend. The filling is spread over flour tortillas, which are rolled tightly, wrapped, and chilled for at least two hours or overnight. Cooling allows the flavors to meld and the rolls to firm up for slicing. When cut into half-inch pinwheels, these snacks are convenient to serve cold and showcase contrasting colors and layers. They are practical for make-ahead needs and provide a blend of creamy, spicy, and fresh flavor sensations in a portable format.
