Ingredients

  • 2 TBS canola oil or olive oil
  • 24 ounces sweet potato slices and cut into ½ inch peices
  • 1 medium jalapeno pepper seeded and diced
  • 1 TBS garlic about 2 cloves, minced
  • ⅛ teaspoon salt
  • ⅛ teaspoon black pepper ground
  • ¼ teaspoon cumin ground
  • 2 medium avocado
  • 12 small corn tortillas
  • Pico de Gallo for topping
  • sour cream or greek yogurt, for topping
