- 24 ounces sweet potatoes, slices and cut into ½ inch peices
- 1 medium jalapeño, seeded and diced
- 1 TBS minced garlic about 2 cloves
- ⅛ teaspoon salt
- ⅛ teaspoon ground black pepper
- ¼ teaspoon ground cumin
- 2 medium avocado
- 12 small corn tortillas
- pico de gallo for topping
- sour cream or greek yogurt for topping
