Description
This pikelet recipe uses self-rising flour combined with sugar, an egg, milk, and melted butter to form a pourable batter. Extra milk can be added to thin the batter for a lighter texture. The batter is cooked on a preheated griddle or frying pan coated lightly with oil or spray. Pikelets are cooked on medium heat, flipping once bubbles appear on the top surface, until both sides are golden brown and cooked through.
The finished pikelets have a soft, tender texture with slightly crisp edges from the cooking process. Serving them warm enhances their flavor and texture. They are traditionally enjoyed with butter, honey, or jam, making them appropriate for breakfast or brunch.
The pikelets can be kept fresh for up to three days when stored in a plastic bag. Reheating before serving is recommended to restore warmth and softness. They pair well with eggs or other breakfast items for a complete meal.
Ingredients
- 1 cup self-rising flour
- 1 tablespoon sugar
- 1 large egg
- 1 tablespoon butter melted
- 1/2 cup milk or more if needed
Instructions
- Sift the flour into a medium bowl and stir in the sugar.
- Make a well in the center of the dry ingredients and crack in the egg.
- Stir while pouring in the milk slowly until the batter comes together. Add more milk if you want thinner pikelets. (THK Note: We added an extra 1/4 cup of milk here) Stir in butter.
- Heat a griddle or skillet over medium heat, and coat with a small amount of cooking oil or spray. Drop a large spoonful of the batter onto the hot skillet. Flip when bubbles appear.
- Cook until browned on both sides. Serve warm pikelets with butter, honey or jam. Stored in a plastic bag, they will keep for up to three days. Best rewarmed before serving.
