Ingredients

  • 8 stalks scallion (green onions)
  • ½ cup neutral oil (vegetable, canola, peanut, avocado, or soybean)
  • ⅛ teaspoon salt (optional)

  1. Wash the scallions and pat dry with a paper towel. Finely chop 8 stalks scallion and place them in a heatproof bowl.
  2. In a small saucepan, heat ½ cup neutral oil over medium heat until hot but not smoking (about 300°F if you’re using a thermometer).
  3. Carefully pour the hot oil over the chopped scallions
  4. Let the scallion oil sit for a few minutes to develop even more flavor. Then, drizzle it over your favorite Vietnamese dishes!
