Vinegar Coleslaw

Ingredients

  • 1 medium green cabbage finely shredded
  • 2 large carrots grated
  • 1/4 cup apple cider vinegar
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon celery seeds
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. In a large bowl, combine the shredded cabbage and grated carrots.
  2. In a separate small bowl, whisk together the apple cider vinegar, olive oil, honey, Dijon mustard, celery seeds, salt, and black pepper to create the dressing.
  3. Pour the dressing over the veggies and toss well to coat everything evenly. Adjust seasoning if necessary.
