For Waffle Ice Cream Sandwich Recipe:
- 2 cups (300g) vanilla ice cream
- ¼ cup (34g) colored sprinkles
- 8 frozen waffles
For Homemade Buttermilk Waffles:
- 2 cups (272g) all-purpose flour
- 1 tablespoon sugar
- 1 tablespoon baking powder
- ¼ teaspoon salt
- 1 teaspoon cinnamon
- 1 ¾ cups (420g) buttermilk
- 2 large eggs
- ½ teaspoon vanilla extract
- ½ cup (113g) butter, melted
Instructions
To Make Waffle Ice Cream Sandwich Recipe:
- Set ice cream out for 20 minutes to allow it to thaw a bit.
- Spread ice cream onto one side of the waffle and place the other waffle on top.
- Coat the sides of each sandwich with colorful sprinkles.
- Freeze for 3-4 hours.
- When you are ready to serve, cut sandwiches lengthwise and enjoy!

To Make Buttermilk Waffles:
- Preheat your waffle iron.
- In a large mixing bowl, stir together flour, sugar, baking powder, and salt.
- Pour in the buttermilk, eggs, vanilla extract, and melted butter into the dry ingredients bowl. Stir until well combined.
- Add one portion of the batter into the preheated waffle iron and cook according to the waffle iron manufacturer's directions.
- When the waffles are cool, prepare the sandwiches as directed.
Notes
- To help the waffles hold their shape, you can freeze the waffles before adding ice cream.
