Ingredients

  • 1 pound ground beef
  • 1 15 ounce can black beans drained and rinsed
  • ½ cup tomato sauce
  • 1 tablespoon chili powder mild
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon Mexican oregano
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 1 cup cheddar cheese shredded
  • 2 cups corn chips
Toppings
  • shredded lettuce
  • tomato diced
  • cilantro diced
  • sour cream
  • guacamole
  • Jalapeño sliced

Instructions

    Cup of Yum
  1. Add the ground beef to a large skillet with a lid. Heat over medium heat and break up the meat while it cooks.
  2. When the meat is starting to brown, add the seasoning blend and stir to completely coat the meat. Continue to cook until the meat is completely browned and no pink remains.
  3. Once meat is completely cooked, stir in the black beans, and tomato sauce. Stir to combine.
  4. Sprinkle shredded cheese on top of the meat mixture, then top with corn chips. Sprinkle extra cheese on top (the two layers of cheese helps the chips stick to the casserole when dishing up).
  5. Cover with the lid and continue to heat over medium heat for 5-7 minutes until the cheese has completely melted.
  6. Remove the skillet from heat, serve and add desired toppings.
