Walnut Cookies

Walnut Cookies use a dough made from all-purpose flour, ground walnuts, baking powder, salt, sugar, butter, and peanut oil. The dough is portioned, topped with walnut halves, brushed with egg wash, and baked to develop lightly browned, crisp tops with a nutty flavor and tender texture inside.

Description

This recipe blends 250g all-purpose flour with ground walnuts, baking powder, salt, and sugar, then incorporates butter and peanut oil to form a crumbly dough. The addition of alkaline water aids in the texture. The dough is divided into small portions, pressed slightly with a fork, and topped with walnut halves. An egg yolk wash mixed with neutral cooking oil is brushed on each cookie's surface for shine and slight crispness.

Baking at 170°C (340°F) for 30 minutes yields cookies with golden, lightly browned tops and a tender crumb enriched by walnut flavors. The combination of ground and whole walnuts provides texture contrasts. The use of peanut oil softens the dough while maintaining structure.

These walnut cookies are suitable with tea or coffee and offer a pleasant nutty treat. The recipe notes allow substituting butter quantities and indicate use of either salted or unsalted butter, enabling slight customization.
