Walnut Cottage Cheese Bread Recipe
This Walnut Cottage Cheese Bread is a moist loaf combining small-curd cottage cheese, chopped walnuts, sugar, eggs, flour, and baking powder. Ingredients
- 2/3 cup cottage cheese 169 grams, small-curd
- ½ cup granulated sugar 100 grams
- 3 large egg
- ½ cup walnuts 60 grams, chopped
- 1 ½ cup all-purpose flour 195 grams
- 2 teaspoons baking powder 10 grams
Instructions
- Preheat oven to 350ºF. Spray an 8 1/2 x 4 1/2-inch loaf pan with cooking spray, then line with parchment paper.
- In a bowl, mix cottage cheese, sugar and eggs together using an electric mixer. 2/3 cup small-curd cottage cheese, ½ cup granulated sugar, 3 large eggs
- Stir in finely chopped walnuts, sifted flour and baking powder. ½ cup chopped walnuts, 1 ½ cup all-purpose flour, 2 teaspoons baking powder
- Pour the mixture into the prepared pan and bake for 40 minutes or until a toothpick inserted in the center comes out clean.
- Let it cool 10 minutes before serving. Serve sliced butter & jam. It's excellent as toast!
Notes
- This bread contains no added salt, as the flavor balance was satisfactory without it.
- It slices well for buttered toast or makes a great base for egg breakfast sandwiches.
- Using parchment paper in the loaf pan helps with easy removal after baking.
