Walnut Cottage Cheese Bread Recipe
Description
Walnut Cottage Cheese Bread blends small-curd cottage cheese, granulated sugar, and eggs to create a moist batter. Chopped walnuts add texture and a distinctive nutty element, while all-purpose flour and baking powder provide structure and lift. The mixture is baked in a loaf pan until the center tests clean with a toothpick.
The finished bread has a soft crumb with a subtle sweetness balanced by the sharpness of the walnuts. It can be served slightly warm or cooled, sliced with butter and jam, or toasted. The recipe omits salt, relying on natural ingredient flavors.
This bread also works well for breakfast sandwiches or as a snack. The recipe yields about 10 slices and uses common baking ingredients with a simple preparation method.
The loaf should cool slightly before serving to allow it to set properly. Parchment lining helps ease removal from the pan.
Ingredients
- 2/3 cup cottage cheese 169 grams, small-curd
- ½ cup granulated sugar 100 grams
- 3 large egg
- ½ cup walnuts 60 grams, chopped
- 1 ½ cup all-purpose flour 195 grams
- 2 teaspoons baking powder 10 grams
Instructions
- Preheat oven to 350ºF. Spray an 8 1/2 x 4 1/2-inch loaf pan with cooking spray, then line with parchment paper.
- In a bowl, mix cottage cheese, sugar and eggs together using an electric mixer. 2/3 cup small-curd cottage cheese, ½ cup granulated sugar, 3 large eggs
- Stir in finely chopped walnuts, sifted flour and baking powder. ½ cup chopped walnuts, 1 ½ cup all-purpose flour, 2 teaspoons baking powder
- Pour the mixture into the prepared pan and bake for 40 minutes or until a toothpick inserted in the center comes out clean.
- Let it cool 10 minutes before serving. Serve sliced butter & jam. It's excellent as toast!
Notes
- This bread contains no added salt, as the flavor balance was satisfactory without it.
- It slices well for buttered toast or makes a great base for egg breakfast sandwiches.
- Using parchment paper in the loaf pan helps with easy removal after baking.
- The bread yields about 10 slices, and calorie counts are estimates based on this serving size.
