Warm Cheesy Broccoli Dip (to share!)

I've got a great potluck dish that will be a hit at your next holiday party. The recipe for this melted cheesy (and healthy - hello broccoli dip!) goodness couldn't be any easier, so get ready to enjoy.

Ingredients

  • 1/2 pound broccoli
  • 1 quarter onion
  • 1 16-oz container sour cream
  • 4 ounces cream cheese
  • 1 1/2 cups cheddar cheese grated
  • whole-grain crackers or pitas, for serving

Instructions

  1. Remove any large stems from the broccoli and mince it along with the onion. Place it in the bottom of a mini (1.5 quart) slow cooker. Add the sour cream, cream cheese, and cheddar on top and give it a good stir. Turn on to high and cook for a minimum of 1 hour (just long enough for the broccoli to soften and the cheeses to really melt) before serving. Alternatively you could bake this dip in the oven on 400 degrees F for about 25 minutes or until bubbly on top!
