Ingredients
- 2 watercress washed and dry, small bunches
- 1 avocado peeled and sliced, ripe but firm
- 2 orange peeled and cut into supreme style slices
- 2 ounces goat cheese crumbled
For the orange tarragon vinaigrette:
- 2 tablespoons orange juice fresh
- 1 tablespoon champagne vinegar can also use white wine vinegar or apple cider vinegar
- 1 garlic crushed, clove
- 3 tablespoons olive oil
- 1 tablespoon tarragon fresh chopped or dry (1 teaspoon
- black pepper to taste
- salt to taste
Instructions
- Mix the vinaigrette ingredients together, a good way to get the ingredients well blended is to place them in a small jar with a lid, and shake it well.
- Place the watercress leaves, avocado slices, orange slices, and crumbled goat cheese in a salad bowl or on individual plates.
- Pour the dressing over the salad, toss gently, and serve immediately.
