Refreshing watercress salad with avocado, orange and goat cheese with an orange tarragon vinaigrette.

Ingredients

Servings
  • 2 watercress washed and dry, small bunches
  • 1 avocado peeled and sliced, ripe but firm
  • 2 orange peeled and cut into supreme style slices
  • 2 ounces goat cheese crumbled

For the orange tarragon vinaigrette:

  • 2 tablespoons orange juice fresh
  • 1 tablespoon champagne vinegar can also use white wine vinegar or apple cider vinegar
  • 1 garlic crushed, clove
  • 3 tablespoons olive oil
  • 1 tablespoon tarragon fresh chopped or dry (1 teaspoon
  • salt to taste
  • black pepper to taste

Instructions

  1. Mix the vinaigrette ingredients together, a good way to get the ingredients well blended is to place them in a small jar with a lid, and shake it well.
  2. Place the watercress leaves, avocado slices, orange slices, and crumbled goat cheese in a salad bowl or on individual plates.
  3. Pour the dressing over the salad, toss gently, and serve immediately.
