Watermelon and Feta Salad
This Watermelon and Feta Salad combines juicy watermelon cubes with crumbled feta cheese and crisp pita croutons, accented by fresh mint and a drizzle of extra virgin olive oil. Ingredients
- 400 grams watermelon cut in 2
- pita croutons
- feta cheese
- extra virgin olive oil
- mint chiffonade
Instructions
Pita Bread:
- Brush the pita with olive oil, season with salt.
- Char grill lightly, cut into 1/12’s place cut pita flatly on a tray.
- Bake at 180° C/ 175° F for 5-7 mins til dry and toasted.
To Serve:
- Place water melon cubes in to a clean serving bowl.
- Top with crumbled feta.
- Drizzle with extra virgin olive oil and mint chiffonnade.
