Watermelon and Feta Salad

This Watermelon and Feta Salad combines juicy watermelon cubes with crumbled feta cheese and crisp pita croutons, accented by fresh mint and a drizzle of extra virgin olive oil. The contrast between the sweet, watery fruit and the salty, creamy feta creates a refreshing balance. Lightly toasted pita croutons add subtle crunch, making it a pleasing mix of textures. Ingredients

  • 400 grams watermelon cut in 2
  • pita croutons
  • feta cheese
  • extra virgin olive oil
  • mint chiffonade

Instructions

Pita Bread:
    Cup of Yum
  1. Brush the pita with olive oil, season with salt.
  2. Char grill lightly, cut into 1/12’s place cut pita flatly on a tray.
  3. Bake at 180° C/ 175° F for 5-7 mins til dry and toasted.
To Serve:
  1. Place water melon cubes in to a clean serving bowl.
  2. Top with crumbled feta.
  3. Drizzle with extra virgin olive oil and mint chiffonnade.
