Watermelon Chopped Salad with Watermelon Vinaigrette

This chopped salad is refreshing, full of a variety of textures and flavours, and is delicious!

Ingredients

For the watermelon vinaigrette:
  • 1/4 cup watermelon puree
  • 1/4 cup olive oil
  • 1/2 lime juiced (~2 tbsp lime juice)
  • salt and pepper to taste
For the chopped salad:
  • 6 cups chopped lettuce of your choice you can use iceberg, green, romaine, or a combination of them!
  • 1 cup diced watermelon
  • 1 avocado diced
  • kernels from 1 ear of cooked corn
  • 3/4 cup diced cucumber
  • 1/2 shallot finely minced or sliced (to your preference)
  • 1/4 cup celery diced
  • Protein of your choice: I used cooked vegan chicken but chickpeas work wonderfully here too.

Instructions

Watermelon Vinaigrette:

  1. In a food processor or small blender, blitz a handful of watermelon cubes to get 1/4 cup watermelon puree. Add remaining of salad dressing and pulse until emulsified. Set aside.
To assemble the salad:
  1. Chop all your ingredients to the size you desire. Make two salads by making a bed of lettuce on two plates. Divide the watermelon, avocado, corn, cucumber, shallot, and celery between the two plates.
  2. Serve with watermelon vinaigrette and toss!
  3. Enjoy!
