Watermelon Cucumber Salad Recipe
I first tried watermelon cucumber salad while on a trip with six of my girlfriends years ago. All seven of us swooned over the savory, sweet, juicy, and fresh combination, and I've been whipping this up every watermelon season since! Let me show you how to easily recreate this summery salad at home.

Ingredients
- 5 5 cups cubed watermelon
- 2 2 cups sliced mini cucumbers
- ½ ½ cup fresh mint chopped
- ½ ½ cup fresh basil chopped
- ¼ ¼ cup Thinly sliced red onion see notes
- ½ ½ cup feta cheese crumbled
The Dressing
- 3 3 tablespoons olive oil
- 2 2 tablespoons EACH: honey and lime juice
- ¼ ¼ teaspoon each: salt and pepper
Instructions
- Whisk the dressing ingredients together in a small bowl.
- To a large bowl, add the watermelon, cucumbers, mint, basil, red onion, and feta cheese.
- Pour the dressing over the top and gently mix to combine. Serve right away.

Notes
- Note 1: A mandolin works best to slice the onion thinly.
- Note 2: If you don't have feta, goat cheese also tastes great in this salad.
- Note 3: If you're a fan of cilantro, add a handful to switch up the flavors.
