Ingredients

  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1/2 teaspoon kosher salt
  • 1 cucumber , peeled and chopped
  • 1/4 red onion , thinly sliced
  • 1/2 cup fresh mint , minced
  • 5 cups watermelon , cut into 2" chunks
  • 1 cup feta cheese , crumbled

Instructions

  1. In a large serving bowl, whisk together olive oil, red wine vinegar, and salt.
  2. Add in the cucumber, onion, mint and stir well.
  3. Gently fold in the watermelon.
  4. Top with crumbled feta cheese.
