Ingredients

  • 6 cups cubed watermelon
  • 4 oz. crumbled Feta cheese (see notes)
  • ¼ cup chopped fresh mint

Instructions

    Cup of Yum
  1. Arrange the cubed watermelon on a platter.
  2. Sprinkle the crumbled feta cheese evenly on top of the watermelon, followed by the fresh chopped mint.
  3. Serve immediately (see notes).

Notes

  • You can buy pre-crumbled feta cheese, but I always find it's much more tasty (less dry, and more evenly sized) if you crumble it yourself from a block. I usually do this with the tines of a fork - it only takes a minute to do.
  • To save time, buy watermelon already cut up. Or, here's how to cut a watermelon.
  • 1/4 cup of fresh mint is a lot, but that amount works well in this salad. You can take it down to 2 tablespoons if you don't want to buy that much mint, especially since fresh herbs can be expensive (luckily, fresh mint is easy to grow yourself!).
  • Do serve this salad immediately. The salt in the feta cheese will draw the water out of the watermelon, resulting in sogginess after a while. Leftovers are still tasty, but serve it for your main event just after assembling.
  • Variations: you can add cucumbers, red or green onions, other herbs like cilantro or dill, a drizzle of olive oil and/or balsamic vinegar or glaze, if you want.
