Watermelon Mojitos

Ingredients

  • 1/2 Cup watermelon puree with or without sugar
  • 1 Tablespoon sugar optional
  • 2 tablespoons white rum more or less to suit your taste
  • 2 teaspoons lime juice
  • 4 leaves mint
  • ice
  • sparkling water

Instructions

    Cup of Yum
  1. Puree watermelon in a food processor or blender. If your watermelon isn't sweet enough add about 1 Tbsp of sugar
  2. Add the rum
  3. Divide the watermelon juice between two glasses.
  4. Add a couple of mint leaves
  5. Squeeze the lime juice into each glass
  6. Fill up the remaining of the glasses with your favorite sparkling water
  7. Decorate with watermelon balls and limes.
