Ingredients
- ¼ cup balsamic vinegar
- 1 tablespoon brown sugar packed
- 1 watermelon cut into wedges, small, seedless
- 4 ounces goat cheese crumbled
- ¼ cup mint leaves
Instructions
- To make the balsamic reduction, add balsamic vinegar and brown sugar to a small saucepan over medium heat. Bring to a slight boil and reduce by half, about 6-8 minutes; set aside and let cool.
- Serve watermelon wedges with goat cheese and mint, drizzled with balsamic reduction.
