Ingredients

  • 2 pounds potatoes
  • 3/4 cup milk
  • 4 tablespoons butter
  • salt and pepper to taste

Instructions

  1. Peel the potatoes. Then cut them into 1-inch chunks.
  2. Rinse the potato chunks in cold water, and place in a large microwave-safe bowl.
  3. Cover with plastic wrap and poke a hole to allow steam to escape.
  4. Microwave on HIGHT for 10-12 minutes or until the potatoes are fork-tender.
  5. Remove the bowl from the microwave.
  6. Add butter and milk into a small bowl and microwave on HIGH for 1 minute.
  7. Then add the butter mixture to the potatoes. Season with salt and pepper.
  8. Mash using a masher or hand mixer until smooth and creamy.
