Whipped Feta Dip

My whipped feta recipe transforms crumbly feta cheese into a gloriously silky dip ~ like magic!

Ingredients

whipped feta
  • 1 lb feta cheese, block style, not crumbles.
  • 5 ounces Skyr, or Greek yogurt (this is about 1/2 cup) for a richer dip you can use sour cream.
  • 1-2 Tbsp fresh squeezed lemon juice
  • 1 Tbsp extra virgin olive oil
  • 1 clove garlic, peeled and smashed
garnish
  • extra virgin olive oil
  • crushed pistachios
  • nicoise olives
  • dill fronds
  • fresh cracked black pepper

Instructions

  1. Add the feta cheese to a food processor or blender, breaking it up into chunks as you add. it. Add the skyr, lemon juice, olive oil and garlic as well.
  2. Blend or process until completely smooth. Taste to adjust any of the ingredients to your preference.
  3. Spoon the whipped feta dip out onto a serving bowl or plate. At this point you can cover and chill if you would like a firmer texture.
  4. When ready to serve, take the back of a large spoon to create swoops or swirls in the surface of the dip. Drizzle generously with the olive oil and top with pistachios, olives, dill, and fresh cracked black pepper.
  5. Serve with crackers, toasted bread, or pita bread.
