Whipped Feta Dip with Macerated Strawberries

Ingredients

Whipped Feta Dip
  • 16 oz fat free cottage cheese
  • 7 oz Mt Vikos feta cheese in brine, drained
  • 1 tbsp olive oil (0.5 fl oz)
  • 1/2 tsp sea salt
Macerated Strawberries
  • 2 cups chopped strawberries (300 grams)
  • 3 tbsp fresh basil, sliced
  • 2 tbsp granulated sugar (25 grams)
  • 1/2 lemon, zested and juiced

Instructions

  1. Add strawberries, lemon juice, lemon zest, and sugar to a bowl, tossing to coat the strawberries evenly. Set aside in the refrigerator for 20 minutes, then mix in basil just before serving.
  2. Add cottage cheese, feta cheese, olive oil, and salt to a food processor or blender. Blend until smooth, then spoon into a flat, wide bowl.
  3. Top whipped feta cheese mix with macerated strawberries. Serve with toasted baguette or pita bread.
