Ingredients
Whipped Feta Dip
- 16 oz fat free cottage cheese
- 7 oz Mt Vikos feta cheese in brine, drained
- 1 tbsp olive oil (0.5 fl oz)
- 1/2 tsp sea salt
Macerated Strawberries
- 2 cups chopped strawberries (300 grams)
- 3 tbsp fresh basil, sliced
- 2 tbsp granulated sugar (25 grams)
- 1/2 lemon, zested and juiced
Instructions
- Add strawberries, lemon juice, lemon zest, and sugar to a bowl, tossing to coat the strawberries evenly. Set aside in the refrigerator for 20 minutes, then mix in basil just before serving.
- Add cottage cheese, feta cheese, olive oil, and salt to a food processor or blender. Blend until smooth, then spoon into a flat, wide bowl.
- Top whipped feta cheese mix with macerated strawberries. Serve with toasted baguette or pita bread.
