Whipped Ricotta Dip with Tomatoes

This Whipped Ricotta Dip blends ricotta and goat cheese with fresh summer tomatoes for a light appetizer recipe that everyone will enjoy.

Ingredients

  • 16 ounces whole milk ricotta cheese
  • 8 ounces goat cheese softened
  • 2 teaspoons finely minced rosemary
  • 1/2 teaspoon salt divided
  • 1/4 teaspoon pepper divided
  • 1 tablespoon olive oil
  • 8 ounces cherry tomatoes cut into quarters
  • 5 thinly sliced basil leaves

Instructions

  1. In a food processor combine ricotta cheese, goat cheese, rosemary, 1/4 teaspoon of salt, and 1/8 teaspoon of pepper. 
  2. Blend until fully combined and smooth.
  3. In a small bowl add chopped tomatoes, basil, remaining salt and pepper, and olive oil. Toss until everything is well mixed.
  4. Scoop cheese mixture into a serving bowl and top with the seasoned tomatoes.
  5. Serve with bread, chips, crackers, and/or veggies.
