This Whipped Ricotta Dip blends ricotta and goat cheese with fresh summer tomatoes for a light appetizer recipe that everyone will enjoy.

Ingredients
- 16 ounces whole milk ricotta cheese
- 8 ounces goat cheese softened
- 2 teaspoons finely minced rosemary
- 1/2 teaspoon salt divided
- 1/4 teaspoon pepper divided
- 1 tablespoon olive oil
- 8 ounces cherry tomatoes cut into quarters
- 5 thinly sliced basil leaves
Instructions
- In a food processor combine ricotta cheese, goat cheese, rosemary, 1/4 teaspoon of salt, and 1/8 teaspoon of pepper.
- Blend until fully combined and smooth.
- In a small bowl add chopped tomatoes, basil, remaining salt and pepper, and olive oil. Toss until everything is well mixed.
- Scoop cheese mixture into a serving bowl and top with the seasoned tomatoes.
- Serve with bread, chips, crackers, and/or veggies.
