White Bean and Squash Soup:
- 8-12 leaves sage fresh
- 2 tsp vegetable oil divided
- 1 medium onion yellow cooking, diced
- 2 cloves garlic minced
- 1/2 small butternut squash about 2 cups, peeled and cut into 1" cubes
- 1 tbsp lemon juice
- 2 oz. white bean canned, drained and rinsed
- 4 cups vegetable broth
- 1 tsp kosher salt
- 1 tsp black pepper fresh ground
- 2 tbsp lemon juice
Herby Quinoa:
- 1 cup quinoa
- 2 cups water change to 1 1/4 cups if making in the IP
- 1/2 tsp thyme dried or 1 tsp fresh, leaves
- 1/2 tsp sage dried or 1 tsp fresh, leaves
- 1/2 tsp kosher salt
- 1/2 tsp black pepper fresh ground
