White Bean Cucumber Salad

This quick and easy salad is made with white beans, cucumbers, radishes, red onion, fresh dill, and a simple lemon dressing. It is the perfect summer side dish!

Ingredients

For the salad:
  • 1 cucumber sliced lengthwise and cut into 1/4-inch slices, English variety
  • 5 radish thinly sliced and halved
  • 1 15- ounce White beans rinsed and drained, canned
  • 1/4 cup dill finely chopped
  • 1/4 cup red onion pickled or thinly sliced
For the dressing:
  • 1/4 cup olive oil
  • 1 tablespoon lemon juice
  • 1 tablespoon red wine vinegar
  • 1 garlic minced, clove
  • 1 teaspoon honey
  • 1/2 teaspoon Dijon mustard
  • salt taste, Kosher salt
  • black pepper taste, Kosher salt

Instructions

  1. In a large bowl, combine the cucumber, radishes, white beans, dill, and red onion. Set aside.
  2. In a small bowl or jar, combine the olive oil, lemon juice, red wine vinegar, garlic, honey, Dijon mustard, salt and pepper. Whisk until well combined.
  3. Pour the dressing over the salad and toss well. Taste and season with additional salt and pepper, if necessary. Serve.
