White Bean Cucumber Salad
This quick and easy salad is made with white beans, cucumbers, radishes, red onion, fresh dill, and a simple lemon dressing. It is the perfect summer side dish!
Ingredients
For the salad:
- 1 cucumber sliced lengthwise and cut into 1/4-inch slices, English variety
- 5 radish thinly sliced and halved
- 1 15- ounce White beans rinsed and drained, canned
- 1/4 cup dill finely chopped
- 1/4 cup red onion pickled or thinly sliced
For the dressing:
- 1/4 cup olive oil
- 1 tablespoon lemon juice
- 1 tablespoon red wine vinegar
- 1 garlic minced, clove
- 1 teaspoon honey
- 1/2 teaspoon Dijon mustard
- salt taste, Kosher salt
- black pepper taste, Kosher salt
Instructions
- In a large bowl, combine the cucumber, radishes, white beans, dill, and red onion. Set aside.
- In a small bowl or jar, combine the olive oil, lemon juice, red wine vinegar, garlic, honey, Dijon mustard, salt and pepper. Whisk until well combined.
- Pour the dressing over the salad and toss well. Taste and season with additional salt and pepper, if necessary. Serve.
