White Chocolate Chip And Cranberries Cookies Recipe: Chewy Or Crumbly
These white chocolate and cranberry cookies are such little gems to cheer us up. With the tangy cranberries pair with milky sweet white chocolate chips, one can always get carried away with having them more and more.

Ingredients
- 7.05 ounces salted butter softened.
- 1 ¾ cups plain flour/ all-purpose flour.
- 3.53 ounces caster sugar.
- 1 egg yolk lightly beaten.
- 2 teaspoons orange juice.
- ½ teaspoon bicarbonate of soda/ baking soda optional (see the note).
- ¾ cup dried cranberries.
- ½ cup white chocolate chips.
Instructions
- Using a handheld mixer, cream the butter until light and fluffy.
- Add the sugar into the butter little by little as you keep whisking until the sugar dissolves.
- Pour the egg yolk into the butter mixture followed with the orange juice, and continue whisking until you have a smooth mixture.
- Sieve the flour and bicarbonate of soda/ baking soda (if using) into the butter mixture. Using a spatula gently fold the mixture until all is combined.
- Add the white chocolate chips and the dried cranberries respectively. Mix well after each addition.
- Preheat the oven at gas 4/ 180° C/ 350° F.
- Prepare your baking tray and line with greaseproof paper/ parchment paper.
- Spoon the dough and shape it into a small ball. Place the cookie dough balls on a lined baking tray and space them well apart. Work through until all the dough is finished. Press the dough balls lightly with the back of a spoon until the dough is around ½ inch in thickness.
- Bake at gas 4/ 180° C/ 350° F for 12-15 minutes if you want chewy cookies and about 20-25 minutes if you want scrumptiously crumbly cookies.

Notes
- You can omit the bicarbonate of soda/ baking soda if you prefer your cookies to feel crumbly and a little crispy. To achieve this you bake them for about 20-25 minutes until the cookies are fully cooked and look slightly golden.
- If you want soft and chewy cookies, you can add the baking soda and cut down the baking time to 12-15 minutes. The cookies will be firm to touch but soft on the inside.
