Ingredients

Cake
  • 1 1/2 cups flour
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 1/2 cups sugar
  • 1/2 cup butter softened
  • 3 large eggs
  • 1/2 cup sour cream
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon coconut extract
  • 3/4 cup white chocolate chips
  • 1 cup sweetened coconut flakes
Frosting
  • 1/4 cup butter softened
  • 4 ounce cream cheese softened
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon coconut extract
  • 1 3/4 cups powdered sugar
  • 2 tablespoons heavy cream
  • 1 2/3 cups sweetened coconut flakes

Instructions

  1. Preheat the oven to 350 degrees.
  2. In a small bowl, whisk the flour, baking powder and salt together. Set aside.
  3. In a large bowl, beat the sugar and butter together until light and fluffy.
  4. Add in the eggs, one at a time until well incorporated. Mix in the sour cream and extracts and beat until smooth.
  5. Now add the dry ingredients and mix.
  6. Stir in the chocolate chips and the coconut flakes.
  7. Spray a bundt pan using cooking spray containing flour. This is vital if you want your cake to release cleanly.
  8. Pour the batter into the pan and place in the oven to bake for 60 minutes, or until a knife comes out cleanly.
  9. Set on a cooling rack for 10 minutes before turning out the cake to finish cooling.
Frosting
  1. Beat the cream cheese and butter together.
  2. Add in the extracts, powdered sugar and heavy cream and beat until smooth.
  3. Once the cake has completely cooled, spread a layer of frosting over the entire cake.
  4. Gently press the remaining coconut flakes into the frosting to cover the entire cake.
  5. Slice and enjoy! Store any leftovers in an airtight container for up to 3 days.
