White wine garlic mussels
White wine garlic mussels bring fresh shellfish steamed in a buttery aromatic broth of garlic, chili, and white wine. The mussels open during cooking, soaking in the fragrant, tangy broth enriched with lemon juice and parsley. This results in tender, moist mussels bursting with bright, savory flavors that pair well with crusty bread to soak up the sauce.
Ingredients
- 1½ kg (3lbs) mussels in shells / half-shell (cleaned)
- ½ cup butter
- 6 garlic thinly sliced, cloves
- 1 red chili pepper finely chopped
- 1½ cups white wine
- lemon juice of 1
- 2 tbsp parsley finely chopped
- salt to taste
- black pepper to taste
Instructions
- Melt the butter in a deep pan with a lid.
- Add the garlic and chilli and cook for 30 seconds or until fragrant.
- Pour in the wine and lemon juice and bring to a simmer.
- Add the mussels then cover with a lid and cook for 5 minutes or until they are all open. Discard any mussels that don't open (if using whole mussels)
- Add parsley and season to taste with salt and pepper.
- Serve with crusty bread for dipping.
