Ingredients
- 2 1/2 cups whole wheat flour
- 1 cup all purpose flour
- 1/2 tsp salt
- 1 1/2 tsp baking soda
- 1/2 cup honey
- 4 eggs
- 6 mashed bananas
- 1/2 cup Greek yogurt
- 2/3 cup coconut oil
- 2 tsp vanilla extract
- 2 cup golden raisins optional
Instructions
- Preheat the oven to 350°F. Whisk the eggs and honey together. In a separate bowl, combine the flour, baking soda, and salt.
- To the egg mixture, add banana, melted coconut oil, yogurt, and vanilla extract.
- In small portions, use a spatula to fold the flour mixture into the egg mixture. Once well-combined, add in the raisins.
- Pour the batter into a loaf pan.
- Bake bread for about 50 minutes. Check the doneness by inserting a toothpick into the center of the bread. If it comes out clean, it's ready. Enjoy!
