  • 2 1/2 cups whole wheat flour
  • 1 cup all purpose flour
  • 1/2 tsp salt
  • 1 1/2 tsp baking soda
  • 1/2 cup honey
  • 4 eggs
  • 6 mashed bananas
  • 1/2 cup Greek yogurt
  • 2/3 cup coconut oil
  • 2 tsp vanilla extract
  • 2 cup golden raisins optional

Instructions

  1. Preheat the oven to 350°F. Whisk the eggs and honey together. In a separate bowl, combine the flour, baking soda, and salt.
  2. To the egg mixture, add banana, melted coconut oil, yogurt, and vanilla extract.
  3. In small portions, use a spatula to fold the flour mixture into the egg mixture. Once well-combined, add in the raisins.
  4. Pour the batter into a loaf pan.
  5. Bake bread for about 50 minutes. Check the doneness by inserting a toothpick into the center of the bread. If it comes out clean, it's ready. Enjoy!
