Whole Wheat Pita Pizza Recipe with Sausage & Spinach

Ingredients

  • 4 whole wheat pitas 100 calories each
  • 1 cup canned petite diced tomatoes
  • ½ teaspoon ground oregano
  • 6 tablespoons + 2 teaspoon low fat ricotta cheese
  • 2 precooked chicken sausages
  • 1 red bell pepper cut into strips, then in half
  • ½ cup grated Parmesan cheese
  • ⅔ cup torn spinach leaves

Instructions

  1. Preheat the oven to 450 degrees F.
  2. Place the pitas on a large baking sheet. Top each pita with ¼ cup diced tomatoes. Spread evenly, then sprinkle with the oregano.
  3. Dollop 5 teaspoon of ricotta cheese onto each pizza.
  4. Divide the sausages, red bell pepper, Parmesan cheese and spinach evenly between the pitas.
  5. Bake until the cheese is melted and the edges of the pita are starting to brown, 8 to 10 minutes.
  6. Cut each pizza in half, and serve.
