Ingredients
- 2 cups white whole wheat flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1/2 cup honey, or maple syrup
- 2 cups ripe mashed bananas
- 1/2 cup plain greek yogurt
- 2 eggs
- 1/4 cup melted butter
- 2 teaspoons vanilla extract
- 1/2 cup diced strawberries
- 1 sliced strawberry for the top of the bread
Instructions
- Preheat oven to 350° F. Grease and flour a 9x5 loaf pan and set aside.
- In a large bowl combine the flour, baking soda, salt, and cinnamon. Whisk together and set aside.
- In another mixing bowl mash the bananas, add the Greek yogurt, eggs, melted butter and vanilla. Whisk together all of the wet ingredients until completely combined.
- Add the wet ingredients to the dry ingredients and fold together until just combined. Gently fold in the diced strawberries.
- Pour the batter into the prepared loaf pan and bake for 45-55 minutes or until a toothpick comes out clean. Let the loaf cool in the pan for 5 minutes and then transfer it to a wire cooling rack to finish cooling.
