Whole30 Hash Brown Breakfast Casserole

Ingredients

  • 1 tbsp avocado oil
  • 1 bell pepper
  • 1 yellow onion
  • 10 eggs
  • 3 cups frozen hash browns
  • 1/2 tsp salt
  • 1/2 tsp pepper

Instructions

  1. Preheat the oven to 400F and grease a 9x13 baking dish with spray avocado oil
  2. Dice the bell pepper and yellow onion
  3. Add avocado oil to a frying pan and heat over medium heat
  4. Add the peppers and onions to the pan and saute over medium heat until soft and fragrant - about 5 minutes
  5. Season the peppers and onions with salt and pepper and add the frozen hashbrowns to the frying pan
  6. Cook the mixture for 3 minutes tossing frequently
  7. Pour hashbrowns, peppers and onions into the greased 9x13 baking dish
  8. Scramble 10 eggs in a bowl and pour over the hashbrowns, onions and peppers and stir gently
  9. Place baking dish in the oven and cook at 400F for 30 minutes
  10. Remove the casserole dish from the oven and allow to cool slightly
  11. Slice the casserole into 12 even squares and enjoy!
