Whole30 Whipped Cream (dairy-free)

This Whole30 Whipped Cream uses chilled coconut milk as a dairy-free base, whipped with vanilla for flavor. The process relies on the separation of solid coconut cream from liquid, resulting in a fluffy, non-dairy whipped topping. It provides a creamy texture suitable for those following Whole30 or dairy-free diets.

Description

Whole30 Whipped Cream is made by refrigerating a can of coconut milk upside down to separate the solid cream from the coconut water. After chilling, the water is drained, leaving thick coconut cream which is whipped with vanilla extract until fluffy and light. This dairy-free alternative offers a creamy, airy texture similar to traditional whipped cream, with a subtle coconut flavor.

The key to success is using fully solid coconut cream and avoiding the addition of liquid sweeteners, which can cause the whip to become runny. The whipped cream is best used immediately after preparation for optimal texture and firmness.

This whipped cream can complement desserts or beverages where a dairy-free topping is desired, fitting within Whole30 guidelines and vegan diets.

Leftover whipped cream can be stored in the refrigerator for 5 to 6 days. If it becomes too firm, re-whipping restores fluffiness. Observing the consistency of canned coconut milk before purchase can help ensure good whipping results.

Ingredients

Servings
  • 1 can coconut milk chilled in the fridge upside down for 24 hours
  • 1 teaspoon vanilla

Instructions

  1. Let the can sit in the fridge overnight before using.
  2. Open up the can and dump out the water. The thick, white cream, should be separate from the water.
  3. Scrape the coconut milk (only the white cream) into a large bowl.
  4. Add in the vanilla if you're using it.
  5. Using a handheld mixer, whip the coconut milk until fluffy (2-3 minutes). Use immediately.

Notes

  • Do not add liquid sweeteners, as they cause the coconut whip to become runny.
  • Use only fully solid coconut cream from the chilled can; soft cream will not whip properly.
  • Whip immediately after preparation for best texture and firmness.
  • Store leftovers in the refrigerator for up to 5 to 6 days; re-whip if it hardens too much.
  • Choose canned coconut milk with mostly solid cream and minimal liquid for best results.
  • One serving size is two tablespoons.
