Wholesome Carrot Oat Bread

Ingredients

  • 1 cup (120g) flour
  • 1-1/4 tsp baking soda
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 1/2 tsp salt
  • 2/3 cup (160ml) oil
  • 1/2 cup (100g) granulated sugar
  • 1/2 cup (100g) light brown sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1-1/2 cup (360ml) shredded carrots
  • 1/2 cup + 1 tablespoon (90g) old fashioned rolled oats
  • 1/2 cup (120 ml) chopped walnut optional
  • 1/2 cup (120 ml) dried dates or raisins optional

Instructions

  1. Preheat the oven to 350˚F. Grease a 8x4 loaf pan and set it aside.
  2. In a mixing bowl whisk flour, baking soda, cinnamon, nutmeg, and salt together. Set aside.
  3. In a large mixing bowl, combine oil, sugars, eggs, vanilla and mix well.
  4. Add the flour mixture to the oil mixture and stir a few strokes. Fold in the carrots, 1/2 cup rolled oats, walnuts and dates (if using) just until everything is combined.
  5. Pour the batter into the prepared loaf pan and sprinkle 1 tablespoon of rolled oats on top. Bake it in the preheated oven for 1 hr or until a tester comes out clean.
  6. Cool completely on a wired rack before you slice.
