Wild Garlic Sauce

Ingredients

  • 30 g wild garlic 1 oz/ about ¾ cup when finely chopped
  • 10 g parsley 0.4 oz/ about ¼ cup when finely chopped
  • ½ teaspoon red chili flakes Note
  • 2 tablespoons red wine vinegar
  • 2 tablespoons water
  • 1 tablespoon lemon juice
  • ½ teaspoon granulated sugar
  • 1 teaspoon fine sea salt
  • ¼ teaspoon ground black pepper
  • 60 ml mild olive oil 2 fl. oz/ ¼ cup

Instructions

  1. Chop the herbs very finely. Set aside.
  2. Combine: In a bowl, mix red chili flakes, vinegar, water, lemon juice, sugar, salt, and pepper.
  3. Slowly start adding the olive oil while whisking all the time until the mixture emulsifies slightly.
  4. Stir in the chopped herbs.
  5. Adjust the taste with salt, pepper, lemon juice, or sugar.
  6. Refrigerate for about 30 minutes to allow the flavors to mingle.
  7. Store: Keep refrigerated for up to 5 days.
