Wild Rice and Black Bean Veggie Burger

Black beans are mixed with wild rice, eggs, bread crumbs, and spices to create a super flavorful, hearty burger. Freezable and DELICIOUS.

Ingredients

  • 3/4 cups cooked wild rice
  • 15 oz. canned black beans rinsed and drained
  • 1/2 cup breadcrumbs
  • 1/2 yellow bell pepper grated or very finely chopped
  • 1/2 small yellow onion grated
  • 1 garlic clove minced
  • 1.5 teaspoons ground cumin
  • 1/2 teaspoon salt
  • 1 egg
  • 1-2 teaspoons hot sauce of your choice

Instructions

  1. In a medium-sized bowl, mash some of the black beans to form a paste, leaving some beans whole.
  2. Add the remaining ingredients and stir, mixing well (for best results use hands).
  3. If mixture is too wet to form into shapes, add some more bread crumbs.
  4. Form into 4 large or 6 small patties and bake on a parchment-covered baking sheet at 350 for approximately 20 minutes, flipping over halfway through.
  5. Eat immediately or allow to cool and freeze in a plastic bag or airtight container.
