Ingredients

Salad
  • 6 cups chopped romaine lettuce
  • 4 slices chopped bacon
  • 2 boneless skinless chicken breasts
  • salt and pepper to taste
  • 2 quartered hard-boiled eggs
  • 1 Sliced avocado
  • 1 Sliced pear
  • ½ cup pomegranate arils
  • ¼ cup feta cheese
Orange Vinaigrette
  • 2 tablespoons orange juice
  • 2 tablespoons canola oil
  • 1 tablespoon white wine vinegar
  • 2 teaspoon honey
  • ½ teaspoon orange zest
  • pinch of salt

Instructions

  1. Combine 2 tablespoons orange juice, 2 tablespoons canola oil, 1 tablespoon white wine vinegar, 2 teaspoon honey, ½ teaspoon orange zest, and a pinch of salt in a small bowl or jar. Whisk to combine and set aside.
Salad
  1. Cook 4 slices chopped bacon over medium-high heat in a skillet for about 7 minutes. Remove the bacon with a slotted spoon and drain on a paper towel-lined plate. Leave 1-2 tablespoons grease in skillet.
  2. Season 2 boneless skinless chicken breasts on both sides with salt and pepper to taste. Returning to the same skillet, cook over medium-high heat for about 5-8 minutes per side or until cooked through. Once cooled, slice the cooked chicken.
  3. To a large serving bowl, add 6 cups chopped Romaine lettuce, 2 quartered hard-boiled eggs, 1 sliced avocado, 1 sliced pear, ½ cup pomegranate arils, and ¼ cup feta cheese. Drizzle the vinaigrette on top, toss, and serve.
